When it comes to mulled wine, tannin is not your friend. The best mulled wines are fruity and sweet so you don’t need anything to distract from that. And when it comes to the wine, Vin de France or generic appellations are best.

3 clementines studded with cloves
1 orange (sliced)
2 Lemons
5 star anise
2 bottles of red wine
3 cinnamon sticks
150g caster sugar
Brandy to taste or rum for a sweeter mulled wine
Method
Combine all the ingredients in a saucepan and gently heat. Alcohol evaporates at 78°C so make sure the mixture doesn’t boil. Once warm, serve in mugs or thick glasses and garnish with the sliced orange.
